Healthy Sweet Potato Breakfast Bake

Sweet Potato Breakfast Bake

It is one of my favorite breakfasts, because I can make it once and have breakfast made for the rest of the week!

Plus it's super healthy and Paleo friendly.  If you can find Whole 30 compliant raisins, it can qualify for the Whole 30 program, too!

It's super easy to make, and if you have a large skillet that can go into the oven, you can cook it up and then bake it all in one dish!  Which I LOVE, because I'm not a fan of washing dishes. Who is??

Sweet Potato Breakfast Bake

It is an odd combination of sweet potatoes, apples, raisins, eggs, milk and spices.  Sounds different.... right?  I absolutely love it! It is soooo delicious!  Hubby isn't a big fan.  That's fine, more for me! 😉


Healthy Sweet Potato Breakfast Bake

  • 2-3 T. coconut oil or olive oil
  • 3 sweet potatoes, peeled and diced.
  • 2 apples, cored and diced. (optional to peel)
  • 2 tsp. cinnamon
  • 2/3 c. raisins, I prefer golden raisins (or Whole 30 compliant raisins)
  • Salt, to taste (about 1/2 tsp.)
  • 6-7 eggs
  • 1/2 c. egg whites (This is optional. You can adjust the amount of eggs.)
  • 1 c. milk ( I use cashew milk. I believe any sort of milk will work.)
Instructions:
  • Preheat oven to 325°.

  • Heat oil in a large pan, cast iron or one that can go into the oven.      Or a regular skillet, you will just have to transfer the ingredients      to a baking dish to bake.

  • Add sweet potatoes, and cook until softened. Stirring frequently for approximately 5-10 minutes.

  • Add apples, raisins, and cinnamon.  Cook until apples are soft and raisins have plumped, about 8-10 minutes. The apples and sweet potatoes should be easily pierced with a fork.  You may need to add a bit of water to prevent the raisins and apples from sticking and burning.

  • Add salt to taste, about 1/2 tsp. Mix and sauté for a few minutes.

  • In a medium bowl, whisk eggs, egg whites and milk.

  • Remove skillet from heat and add the egg mixture to the skillet. (Or spray a 13x9 pan with nonstick and add the sweet potatoes/apple/raisins mixture, then pour the whisked eggs over.

  • Use the back of a spoon to smooth and cover the egg mixture.

  • Bake for 20 minutes. A knife inserted into the center of the pan should come out clean when finished.
