I have been making this dish for over 20 years, it's a staple at every holiday meal. It is that good! Over the years, I've cut down on the sugar and butter and every bite is still just as good!
It's incredibly easy to make and the brown sugar pecan crust just makes the dish even more delicious!
Hubby isn't a big fan of nuts, so I usually only put pecans on half of the dish. He just doesn't know what he's missing. :)
I've doubled and tripled this recipe with no issues. The recipe I'm giving you is for an 8x8 dish.
Enjoy!
Pecan Crusted Sweet Potato Bake
Sweet Potato Bake:
1 29oz. can of sweet potatos or yams
1/4 cup sugar (I've used splenda before or Domino light sugar, too)
1/2 tsp. salt
1 Tbl. flour
1 egg
2 Tbl. melted butter
1 tsp. vanilla
Mix until combined well and spread into an 8x8 dish.
Pecan Crust:
1/2 stick melted butter
1/2 cup brown sugar
Pecans
Mix crust mix and spread over Sweet Potatoes, then sprinkle desired amount of pecans.
Bake at 350 degrees for 20 minutes. It's that simple!!
