For my special day I was craving tiramisu cake... 💕
But... I would've liked MORE coffee taste in it. It was moist, light and yummy. Plus it was super easy! In my recipe I doubled the coffee that you pour on the cake...Yum! 😋
As you can see, I barely was able to get a photo of this cake! It was that good! My nephew had 3 slices of it that night! 😳😂 Even my niece liked it... well, she's a 9 year that's always wanting a sip of my black coffee... 💗
Easy Tiramisu Layered Cake
INGREDIENTS:
Cake
- White box cake mix
- 2 teaspoons instant coffee
- 1/4-1/2 cup very strong coffee (if you need it stronger add some instant coffee to it)
- 1 tablespoon coffee liqueur
Filling
- 1 (8oz.) cream cheese or marscapone cheese
- 1/2 cup powdered sugar
- 2 tablespoons coffee liqueur
Frosting
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 2 tablespoons coffee liqueur
INSTRUCTIONS:
- Preheat oven to 350 degrees. Grease and flour 3 (8-inch) cake pans.
- Prepare cake according to box instructions. (I used 3 eggs instead of egg whites.) Divide 2/3 of the batter between all 3 pans. Stir in 2 tsp. of instant coffee into the remaining cake batter. Beat until mostly dissolved. Then divide between all 3 pans and swirl batter with a knife.
- Bake for approximately 20-25 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow cake to cool for at least 10 minutes.
- Combine 1/4-1/2 cup strong coffee with the 1 tablespoon of coffee liqueur. Set aside. (The amount of strong coffee depends on how much you want soaked into the cake.)
- To make the filling: Combine cream cheese, 1/2 cup powdered sugar and 2 tablespoons coffee liqueur in a mixing bowl and beat with an electric mixer on low until smooth. Set aside.
- To make frosting: Pour the heavy cream into a medium mixing bowl. Using an electric mixer set on medium to high, beat the cream. Slowly add 1/4 cup powdered sugar and 2 tablespoons of coffee liqueur. Beat until stiff.
- Take 1/2 cup of the frosting and add it to the filling. Fold until well blended.
- Cake assembly: Place one layer of cake on a plate or platter. Using a skewer or straw, poke holes all throughout the cake, approximately 1 inch apart. Brush or pour 1/3 of the reserved coffee mixture over the cake layer. Spread half of the filling mixture. Repeat until all layers are used.
- Frost cake and garnish with mini chocolate chips and a sprinkling of cocoa powder, or chocolate curls. Refrigerate for at least 30 minutes before serving.
