Dreamy Pumpkin Cupcakes

When I first took a bite of these babies I thought...
OMG! These are the best I have EVER baked!
The combination of the super moist cupcake and the 
TO DIE FOR frosting was absolutely amazing!!
They were so easy to make also, which makes them
PERFECT!

It all started when it was my turn 
to host our book club night.
I have been in this book club for almost a year.
I can't believe a year has passed so quickly.
This book club group has become so special to me, we have laughed together, cried together, shared our lives with each other.
I adore book club and I love each of the ladies dearly!

I'm looking forward to next year!
Anyway,
this was our last meeting for the year.
We have all taken turns hosting at our homes, and we provide a few snacks.
It seems that I have this knack of trying new recipes on my best of friends.  
I guess I figure they already love me and if it's a bomb they wont hate me. :)
So, I went to Pinterest and started searching
 for some appetizers.
Oh, there are so many to choose from!
I have 2 boards for food and 
I probably should have more....
One of them is Yummy! That one is just regular yummy food. 
The other one is Sinful Pleasures. 
I think you get the idea.

So...
I found two recipes, a cupcake recipe and a frosting recipe.  
Then I put them together.
I made a couple of other things, but I'm going to focus and these 
DREAMY Creamy Pumpkin Cupcakes.
For the cupcakes all you need is:
Yellow Cake Mix
Vanilla Instant Pudding Mix
1-15oz. can of pumpkin(puree)
Easy Peasy!! All you have to do is mix them together!
Seriously!
It seemed a bit stiff and dry, but it all mixed up.
Then I just scooped and 
plopped them in the pan.
Bake them @ 350 for 20-25 minutes.
They puffed up some but not a lot.
I still can't believe it... no eggs, no oil, no water!
And they are moist!
The next best part is the frosting! I don't know why I didn't take ANY pictures, but I didn't. Sorry.
But you can't mess up the recipe.  
It's pretty easy too!
Its the dreamy part of this cupcake. 
These are the ingredients I used.
Dreamy Maple Cinnamon Frosting:
1 pkg. Neufchatel Cream Cheese (soft)
1 stick of butter (soft)
1 1/2 Tbl. Maple Syrup
1 tsp. Cinnamon
1 tsp. Vanilla extract
3 c. powdered sugar

Get out your mixer, cream together the cream cheese and the butter.  Then add the spices and mix them in.  Then add the powdered sugar.  I did it a cup at a time. Be careful it could puff all over you.  :)

Dip a spoon in it and taste this dreaminess!
Now, pick yourself off the floor and 
put these babies together!

This little trick to make them pretty is so easy too!
I have those cake decorating tips that I hardly ever use, but I thought I'd dig them out to dress up these photo worthy cupcakes!

First get out a large gallon size baggie.
Then snip the corner, not too big.
I must have gotten sugar all over the bag... 
I have no idea. 
Then open it up and shove 
the little tip through the hole.
Fill up up the baggie with Dreamy Frosting.
Squeeze and swirl. See how easy?
So unbelievably yummy!!
Then I added a pumpkin kiss on top. :)
Here's the recipe all together.

Pumpkin Cupcakes:
Yellow Cake Mix
Vanilla Instant Pudding Mix
1-15oz. can of pumpkin(puree)

Mix together, and bake in cup cake pan with cup cake liners. Bake at 350 for 20-25 degrees.

Dreamy Maple Cinnamon Frosting:
1 pkg. Neufchatel Cream Cheese (soft)
1 stick of butter (soft)
1 1/2 Tbl. Maple Syrup
1 tsp. Cinnamon
1 tsp. Vanilla extract
3 c. powdered sugar

Cream the cream cheese and stick of butter until light and fluffy. Add syrup, cinnamon, and vanilla and mix. Add the powdered sugar one cup at a time.  Mix until smooth and creamy.

  5. I must say, a 3 ingredient cupcake couldn't get any easier - I'll have to give your style of cream cheese frosting a try - we just make the regular recipe but it's great!
