Whole30 Quiche

I hope you all are enjoying your summer!
We've been busy around here at the Stonybrook House.
I thought I had already shared this recipe, but nope I hadn't!
You need this one!

It's great when you are feeling really busy, and don't want to take the time to cook something for breakfast.
I just cook one up and eat it for the week.
It's super quick and easy to make.
Ingredients:
Pretty much whatever you have on hand.
Pick a meat.  I've used turkey sausage like pictured or you could even try the DIY Turkey Italian Sausage, I posted last week. It doesn't really matter, whatever you feel like.
Then add veggies, lately I've been using frozen spinach, onions, garlic, bell pepper.  Again, use what you have on hand. Be creative! :)
Then, I saute' all of the veggies and meat together. I usually add a bit of coconut oil in the pan just to help saute'.
Next, whisk up your eggs.  I use about 5-6 eggs and fill in with egg whites.
Spray you pie dish with non-stick spray. Then dump your meat and veggie mix into it. Pour the eggs over and slightly mix it in.
If it looks like it needs a bit more eggs, I add eggs whites, or you could add more eggs. You can see how much I fill it up.
Bake in the oven at 350 degrees for about 25-30 minutes.  The quiche should be firm. I usually shake the dish a bit to see if anything is wiggly.
It even browns a bit on top.
Slice and eat! If I'm having fruit with it, I might have a small slice like that.  But, if that's all I'm having, I can eat a quarter of the quiche. Seriously!
