Easy Crockpot Buffalo Chicken Soup = Amazing!!


My SIL and brother invited us over for the Super Bowl, 
since I wasn't "up to" entertaining this year.  They are so great!
I made some super easy buffalo chicken soup.
 Little did I know it was going to be a HIT! 
Everyone asked me for the recipe.... so here it is!
Tomorrow I'll be sharing the other HIT hubby made! :)

Easy Crockpot Buffalo Chicken Soup

2 boneless skinless chicken breasts, cooked & shredded
2 T. olive oil
1/4 of a sweet onion, chopped (or any kind)
1 stalk of celery, chopped
Pinch of salt
2 cloves of garlic, minced
1 T. flour
4 - 14oz. cans of chicken broth (56oz.)
1/2-3/4 c. buffalo sauce (more or less depending on your taste)
2-3 potatoes chopped
1/3 c. shredded cheddar cheese
1/4 c. parmesan cheese
1 - 8oz. block of cream cheese

In a skillet, heat olive oil over medium heat.  Add onions, celery and salt and stir to coat.  Cook for 3-5 minutes, until soft and slightly translucent.  Stir in garlic and cook 1-2 minutes more. Add flour and stir, continue stirring for 1 more minute.

Pour into crockpot, add chicken broth, buffalo sauce, chicken, potato, and cheeses.  The cream cheese you can add in chunks. Cook on high for 4 hours. You will most likely need to “break up” the cream cheese chunks.  I did using a spoon and a fork.
You can serve with tortilla chips or croutons.
