You know, I had very good intentions to put this
amazing recipe up last week....
Good intentions don't really amount to much when they don't happen.
Life and such usually mess up my best intentions!
But here it is NOW!!
One of the reasons I didn't get it finished was because I went to an
A-MA-ZING!!! blogging conference, Haven 2013. I went to this conference last year and it changed my blogging life! Anyway, I'll share more about that later this week. I really will. :)

Back to the zucchini!
These are so delicious!!
Hubby and I demolished the whole plate.
Plus I believe they are so super easy, that a "recipe" really isn't needed.
Do you think I could use the word "so" any more than I do??? Oh My!!
So...slice up that bad boy!
Not too thick and not too thin.
I used my electric griddle so I could cook a bunch at a time.
You can use any kind of skillet.
Lay the slices on the griddle.
Sprinkle with garlic powder, season salt, and Parmesan cheese.
Spray them with olive oil non-stick spray.
Then flip them carefully.
Sprinkle all the same ingredients on the uncoated side and spray again.
Let them cook til they start looking a bit transparent.
Then flip again, and cook the other side.
So easy and so good!!
I'm getting so many zucchinis from my garden
I could literally make them every day!
Have you ever made zucchini noodles?
I made them as spaghetti, pretty good too!

Delicious!! I wanted to give you a recipe for using zucchini we just tried this weekend and it was GOOD! It involves NO cooking. I was really skeptical but we polished the whole plate!
ReplyDeleteSlice the zucchini paper thin with a mandolin.
In a bowl, drizzle zucchini with olive oil, whatever herbs you want, Parmesan cheese plus salt and pepper.
Lay them all out on a plate, then drizzle with more olive oil, sprinkle with herbs and Parmesan to your liking. ITS SO GOOD! The texture is really neat.
Zucchini nooodles - yes i've tried and I love! I sometimes cut them long and thin to be papardalle pasta. and my favorite, use the HUGE zuch's you get at the end of the year to make lasagna. Instead of noodles, use long slices of the zucchini. So good!
